That night felt different from our usual service. New faces, longer conversations, a room that just had a good energy to it. What most people don’t see is how much goes into making nights like that happen — the planning, the prep, the whole team putting in the work and trying to get a little better every time.
We’re a family business, born in the Bay Area, just trying to build a place people want to come back to — and feel comfortable bringing someone new with them.
1/23/26 + 1/24/26 A Bite & a Pour — ft. SUGOI Brewing
January 23 & 24 · 5:00–9:30 PM For two nights only, Sobo Ramen hosts a seated, tasting-style dinner that explores beer pairing, refined ramen, and a more deliberate dining format.
The evening opens with a SUGOI Brewing Company BIRU 101 Rice Lager taster, paired with a hamachi opening bite. This pairing is included with the purchase of any ramen that night. The brewer will be present to share insight on the beer, the pairing, and the approach behind it.
Throughout the evening, guests can order from a special appetizer menu, classic ramens and acurated ramen lineup, and a featured bowl that represents a direction we’ve been thoughtfully developing.
Featured Ramen Clarified Tonkotsu with Botan Ebi (Japanese Sweet Shrimp) & Ankimo This bowl draws on the depth and structure of traditional tonkotsu, presented in a lighter, more precise form. Clarification allows delicate ingredients—like botan ebi and ankimo—to lead rather than get buried. It’s not a reinvention of ramen, but an intentional interpretation of it.
A Refined Sit-Down Experience For these nights, our fast-casual space shifts into a sit-down, paced dinner experience. We began exploring this format during a December pairing night, learned a great deal from it, and this event represents the next step in that ongoing refinement. Vegetarian options will be available on both the ramen and appetizer menus. For guests returning from our last tasting event, we’ll be pouring a small amount of IIchiko during the evening as a thank-you. RSVPs help us set the room and plan the night. Walk-ins are welcome. House of Sobo Evenings are built around a feeling I grew up with -- being cared for at a table.
Dinner wasn’t about the occasion. It was the moment food brought people back together, care without needing to say it out loud.
That feeling didn’t come from who was sitting there, but from my parents coming home tired and choosing the table anyway.
